The Wine-Making Process
After a thorough selection, the grapes are left to macerate under controlled temperature (28°C) in tanks of vitrified cement for a period of 10/12 days. In the same tanks, the malolactic fermentation takes place, followed by the ageing that is done partially in Sessile Oak barriques (also known as Durmast Oak) and partially in tanks of cement for a total period of at least 6 months.
Wine assembly occurs in tanks of cement and when necessary, clarification can be done with the albumen. Bottling is done with very large filters therefore the wine is left refining in bottle for at least 3 months.
